Food Challenge

Big and I decided to give ourselves a challenge this week.

Can anyone guess by checking out this photo of our groceries? One week of vegetarian meals.

It seems like a simple idea, right? I haven't eaten beef in about two years for a variety of reasons, so we mostly eat chicken as our main meat source. Since we've been trying to be healthier, this seemed like the perfect idea for us to try, just for a week. If we like it, we might try the whole month!

My resolution for 2011 was based on the idea of the 100 Mile Diet. It's a very do-able idea for someone like me who lives in a mostly rural province. My goal is to eat food that has been touched by fewer hands. I would like to eat as much local food as possible, and cut down on the processed foods. I don't think anything that 'tastes fresh' after being packaged and sitting in your freezer for four months can be healthy.

So we purchased no meat on our trip to the grocery store this weekend and I've already planned our meals for the week. If anyone would like to join me in a food challenge, let me know! I love to share recipes and try something new.

Here's hoping I don't crack down and eat a whole pound of bacon on Wednesday evening...

Good luck! I could not do it. I hate too many vegetables.

Yay! I've been a vegetarian since I was 14 (which means for 15 years; yikes, getting old). I think you'll be able to do it easily! I eat Quorn fake chicken all the time, and it totally does the trick. Comes in "chicken" cutlets or "chicken tenders" (which aren't really "tenders," they're more like chicken pieces that are great for soups, enchiladas, etc.). Check them out!

Also, I posted a delicious veggie recipe the other day that I have literally been eating all week. It's here:

Try 101cookbooks, epicurious, etc. for great veggie recipes. I'm excited to hear about what you make!

I'm really bad about eating processed foods. It just seems so much easier sometimes, especially when you're in a hurry. Good luck!

Once we're moved and are only a few blocks from the Farm Market, I plan on going down on Saturday mornings to get my veggies there. The Hunters Bros have booths there!

I think you will really enjoy it. You can have a lot of fun with vegetarian recipies and the products out there have come so far from just "tofu". Try Yves ground round for Chili (I think they even have a "mexican" flavoured variety)...by the time you put all the seasonings in it, you can't tell it is soy! The italian flavoured soy is very good in tomato sauce on pasta...be sure to use lots of seasonings and let the sauce simmer for at least 1/2 hour...otherwise it may taste "beany".
I found that I felt SO much better without meat in my diet, and I had more energy. And you're helping reduce the pollution generated by the meat industry!
